This is one of the easiest recipes 😉 I only started to love Thai food during my visit to Berlin, where we went to Cha Chã Positive Eating, where we gut the yummiest Thai noodle soup. Then I tried make my own Thai noodle soup sevearal times, and I also bring some for lunch at work 😉
This recipe is for 3 servings 😉
Ingredients:
150 g rice noodles
400 ml coconut milk
4 teaspoons of red curry paste
2 teaspoons red chili (optional)
2 cm ginger, grated
1 onion, sliced
2 cloves garlic, diced
1 red bell pepper, sliced
1 cup brocolli florets + stems
1 carrot, in small sticks
salt
2 tabelspoon oil
Cilantro, optional
Instructions:
Cook the noodles.
In a large, add the oil and heat it up. Add the onion and garlic and saute for 3 min.
Add the curry paste, chili, grated ginger, and coconut milk and let it cook for another 5-6 min.
Add the vegetables, and cook for 2 min.
Add the cooked noodles, mix it. Taste with salt, and serve with topped cilantro 😉
